Welsh Omelette

Although the French coined the term omelette in the sixteenth century, various incarnations of egg “pancakes” filled with meat or vegetables and seasonings have existed since ancient times. Here is a recipe with a distinct Welsh flavour a Welsh omelette.

5 large Welsh eggs
100g mushrooms
15g Welsh butter
1 tablespoon laver bread
1 tablespoon chopped chives
50g of either Teifi, Aeron Valley, Caws Cenarth or any Welsh farmhouse cheese grated
salt and freshly ground black pepper

Melt the butter in an omelette or frying pan and add the sliced mushrooms. Cook for 5 minutes, meanwhile break the eggs into a bowl and whisk with 3 tablespoons of water. Add the laver bread and chives and mix well. Season with salt and pepper and pour over the cooked mushrooms. Leave to cook over a moderate heat and finish off under a hot grill until the eggs are just set. Sprinkle the omlette with the Teifi cheese and fold over. Serves 2.
